Two years into learning guitar as an adult, here is the honest report.
The hands are fine. The hands were never the problem. The problem is that as an adult you can hear exactly how far off you are, constantly, and there is no version of the early stages that sounds acceptable to you. A child learning does not know they sound bad. That ignorance is a resource and nobody tells you that you have spent yours.
So year one does not really build playing. It builds tolerance, which is not what anybody puts on the front of a beginner book.
